This granola recipe is my take on a delicious nut and seed muesli which is great to sprinkle over your breakfast or dessert.
Ingredients
2 cups raw nuts
(I use almonds, walnuts, cashews and brazil nuts)
2 Tbls coconut oil
1 Tbls cinnamon
1 Tbls honey
1 tsp vanilla
3 Tbls pumpkin seeds
3 Tbls sesame seeds
3 Tbls sunflower seeds
3 Tbls linseeds
3 Tbls dried coconut
Instructions
1. Turn on oven to 160C and line a baking dish with baking paper.
2. Coarsely chop raw nuts in a food processor.
3. Melt the coconut oil in a large glass bowl. Add the honey, cinnamon and vanilla and stir to a paste.
4. Add the chopped raw nuts, seeds and coconut. Mix together.
5. Bake for 10-15 min until golden brown. I leave mine in the oven afterwards with the door slightly open until it cools and crisps up a bit.
6. Sprinkle on chia pudding or fresh fruit and yogurt and enjoy!
